Black Forest Pie

Ingredients:

  • 1 cup (115g) Wyman's Sweet and Sour Cherries, frozen
  • 1 store bought or homemade pie crust
  • ⅓ cup (47g) flour
  • ¼ tsp baking powder
  • Pinch of salt
  • 3 tbsp (42g) butter
  • ½ cup (100g) sugar
  • ¼ cup (25g) cocoa powder
  • 2 large eggs
  • ½ tsp vanilla
  • ¼ cup (45g) chocolate chips
  • Whipped Topping
  • Note: A box of brownie mix can be used for the filling but it will make extra filling which can be baked separately

Directions:

Preheat the oven to 425°F. Roll out a pie crust and place in a pie plate. Add pie weights (you can use sugar if they are unavailable) and bake for 15-17 minutes to parbake the crust. Set the crust aside to cool. Turn the oven down to 350°F.

Chop frozen cherries into bite sized chunks (in half or quarters). Set aside.

In a small bowl whisk the flour, baking powder, and salt. Melt the butter in a microwave or over a double boiler. Pour hot butter into a large bowl and stir in the sugar. Add cocoa powder to the large bowl and mix until smooth. Beat eggs one at a time into the mixture and add the vanilla mixing until very smooth. Fold the flour mixture into the liquid mixture followed by the chopped Wyman's Sweet and Sour Cherries and chocolate chips.

Pour brownie mixture into cooled crust and bake for 30-40 minutes, until a tester inserted in the brownie center comes out clean. Remove from the oven and place on a cooling rack. Cool completely. Spread Whipped Topping on top before serving.
