Wild Blueberry Baked Oatmeal Cups

When we’re stressed out, an easy make-ahead breakfast can help us start the day off on stable footing so we’re better able to roll with the punches. These baked oatmeal cups feature stress-fighting ingredients like wild blueberries and eggs plus oats, chia seeds and flax to add fiber to support gut health, which is also important for mental health and immune system function. Add a spread of your favorite nut or seed butter for extra protein and healthy fat to fuel your brain and body.

Makes 6 Oatmeal Cups

Ingredients

  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flax
  • 1 teaspoon cinnamon
  • 2 eggs, beaten
  • 1/2 cup plain yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1 cup Wyman’s Wild Blueberries, thawed

Directions:

  1. Preheat oven to 350 degrees F. Grease a muffin tin with 6 cups.
  2. Mix together dry ingredients and set aside. Mix together wet ingredients.
  3. Add wet to dry ingredients and stir well to combine. Pour batter into 6 muffin tins.
  4. Bake at 350 until cooked through, about 20-25 minutes.

Store in an airtight container up to one week in the fridge or freeze.
